1 loaf of brioche bread, cut into thick slices (about 8 slices)

4 large eggs

2 cups whole milk

1 cup heavy cream

2/3 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

Pinch of salt

1/4 cup brown sugar (for caramelizing)

Fresh berries (strawberries, blueberries, or raspberries, optional for serving)

Fresh mint leaves (optional for garnish)

Instructions
 

Prepare the Bread: In a large, shallow dish, lay the slices of brioche so they are comfortably arranged in a single layer.

    Make the Custard Mixture: In a medium mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, nutmeg, and a pinch of salt until well combined and the sugar is dissolved.

      Soak the Bread: Pour the custard mixture over the brioche slices, ensuring all the slices are well-coated. If necessary, gently press down the bread to fully immerse it in the custard. Cover the dish with plastic wrap and refrigerate overnight, allowing the bread to soak up the custard.

        Preheat the Oven: In the morning, preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

          Transfer to Baking Dish: After soaking, carefully transfer the brioche slices to the greased baking dish, overlapping them slightly if needed.

            Bake: Pour any remaining custard mixture evenly over the bread slices. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the custard is set.

              Caramelize the Top: Once baked, remove the French toast from the oven and let it cool for a few minutes. Evenly sprinkle the brown sugar on top of the baked French toast. Using a kitchen torch, carefully caramelize the sugar until it melts and forms a crispy, golden layer. Alternatively, you can place the dish under a high broiler for 1-2 minutes, keeping a close eye to prevent burning.

                Serve: Let the caramelized top cool for a minute. Serve warm, topped with fresh berries and garnished with mint leaves if desired.
