Ingredients

1 loaf of brioche bread, sliced into thick pieces

4 large eggs

2 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup brown sugar (for topping)

1 tablespoon unsalted butter, softened (for greasing the baking dish)

Fresh berries and powdered sugar (for serving)

Instructions

Prepare the Dish: Grease a 9x13 inch baking dish with softened butter. Arrange the sliced brioche in the dish, overlapping the pieces slightly.

Make the Custard: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until fully combined.

Combine: Pour the custard mixture evenly over the bread slices. Ensure that all pieces are well coated. Gently press down on the bread with a spatula to ensure it absorbs the liquid.

Cover and Refrigerate: Cover the baking dish tightly with plastic wrap or aluminum foil. Refrigerate for at least 4 hours, preferably overnight, to allow the bread to soak.

Preheat the Oven: When you're ready to bake, preheat your oven to 350°F (175°C).

Bake: Remove the cover from the baking dish and sprinkle the brown sugar evenly over the top of the soaked bread. Bake in the preheated oven for 40-45 minutes, or until the custard is set and the top is golden brown.

Caramelize the Top (optional): For a classic crème brûlée finish, use a kitchen torch to carefully caramelize the top layer of brown sugar until it forms a crispy shell. Alternatively, you can broil the dish in the oven for 1-2 minutes, until the sugar melts and bubbles (watch closely to avoid burning).

Serve: Let the dish cool for a few minutes. Serve warm, garnished with fresh berries and a dusting of powdered sugar.
