Ingredients

1 cup coarsely ground yellow cornmeal (polenta)

4 cups water or vegetable broth

1 teaspoon salt

2 tablespoons unsalted butter (or olive oil for a vegan option)

1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)

Freshly ground black pepper, to taste

Optional toppings: sautéed mushrooms, roasted vegetables, or fresh herbs

Instructions

In a large saucepan, bring 4 cups of water or vegetable broth to a boil. Add salt.

Slowly whisk in the cornmeal, ensuring no lumps form. Reduce heat to low and continue whisking for about 5 minutes until it begins to thicken.

Switch to a wooden spoon, and stir constantly for an additional 15-20 minutes, until the polenta is smooth and creamy. If it becomes too thick, you can add a bit more water or broth.

Once cooked, stir in the butter (or olive oil) until melted and incorporated. Then mix in the grated Parmesan cheese (or nutritional yeast) until creamy and well combined.

Season with freshly ground black pepper to taste.

Serve hot, topped with your choice of sautéed mushrooms, roasted vegetables, or fresh herbs for added flavor and texture.
