200g all-purpose flour

100g unsalted butter, softened

100g granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

Pinch of salt

200g jam (your choice: apricot, raspberry, or quince)

Zest of 1 lemon

Optional: powdered sugar for dusting

Instructions
 

Prepare the Dough: In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the egg and vanilla extract, mixing until well combined.

    Combine Dry Ingredients: In another bowl, sift together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until a soft dough forms.

      Chill the Dough: Wrap the dough in plastic wrap and refrigerate for about 30 minutes to make it easier to handle.

        Preheat the Oven: Preheat your oven to 180°C (350°F).

          Roll the Dough: After chilling, remove the dough from the fridge. Set aside about 1/3 of the dough for the lattice topping. Roll out the remaining dough on a floured surface to fit a 9-inch tart pan with a removable bottom.

            Assemble the Tart: Carefully place the rolled-out dough into the tart pan, pressing it evenly into the bottom and up the sides. Trim any excess dough hanging over the edges. Spread the jam evenly over the crust.

              Create the Lattice: Roll out the reserved dough and cut it into strips (about ½ inch wide). Arrange the strips over the jam in a lattice pattern.

                Bake the Tart: Bake in the preheated oven for about 30-35 minutes or until the crust is golden brown.

                  Cool and Serve: Allow the tart to cool in the pan for a few minutes before carefully removing it. Dust with powdered sugar if desired. Serve warm or at room temperature.
