Ingredients

1 ripe peach, peeled and pitted

2 tablespoons honey

1 tablespoon Dijon mustard

1/4 cup balsamic vinegar

1/2 cup extra virgin olive oil

Salt and pepper to taste

1 teaspoon fresh thyme or basil (optional, for added flavor)

Instructions

Blend the Base: In a blender or food processor, add the peeled and pitted peach, honey, and Dijon mustard. Blend until smooth and creamy.

Add the Vinegar: Pour in the balsamic vinegar and blend again until fully incorporated.

Emulsify: With the blender running on low, slowly drizzle in the olive oil. This will help emulsify the vinaigrette, creating a smooth and velvety texture.

Season: Once the vinaigrette is combined, add salt and pepper to taste. If desired, add the fresh herbs and blend for a few seconds to mix.

Taste and Adjust: Taste the vinaigrette and adjust sweetness or acidity by adding more honey or vinegar based on your preference.

Serve or Store: Use immediately over salads or as a marinade, or transfer to a jar and store in the refrigerator for up to one week. Shake well before each use.
