1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

2 (8 oz) packages cream cheese, softened

1 cup powdered sugar

1 tablespoon vanilla extract

2 large eggs

1 cup heavy cream

2 cups fresh peaches, peeled and diced

2 tablespoons lemon juice

2 tablespoons cornstarch

1 tablespoon brown sugar

Instructions
 

Prep the crust: Preheat the oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until well mixed. Press the mixture firmly into the bottom of a parchment-lined 9x9-inch baking pan. Bake for 10 minutes, then let cool.

    Make the cheesecake filling: In a large bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition, until thoroughly blended.

      Incorporate the heavy cream: Slowly pour in the heavy cream while mixing on low speed. Blend until the mixture is homogenous and silky.

        Prepare the peach topping: In a separate bowl, combine the diced peaches with lemon juice, cornstarch, and brown sugar. Mix until the peaches are well-coated.

          Assemble the bars: Pour half of the cream cheese mixture over the cooled crust in the baking pan. Evenly distribute half of the peach mixture over the cream cheese layer. Pour the remaining cheesecake mixture on top, then layer the remaining peaches.

            Bake: Bake in the preheated oven for about 35-40 minutes, or until the edges are set but the center slightly jiggles when shaken. Remove from the oven and let cool for about an hour at room temperature, then refrigerate for at least 4 hours or overnight for best results.

              Serve: Once chilled, lift the bars out of the pan using the parchment paper. Cut into squares and serve chilled, garnished with fresh peach slices or whipped cream if desired.
