Ingredients

For the Chicken Marinade:

4 boneless, skinless chicken breasts

4 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon paprika

1 teaspoon black pepper

1 teaspoon salt

2 tablespoons olive oil

Juice of 2 limes

1/4 cup fresh cilantro, chopped

For the Creamy Green Sauce:

1 cup fresh cilantro, packed

1 jalapeño pepper (seeds removed for less heat)

1/2 cup mayonnaise

1/2 cup Greek yogurt (or sour cream)

Juice of 1 lime

1 teaspoon garlic powder

Salt to taste

Instructions

Marinate the Chicken: In a large bowl, whisk together garlic, cumin, paprika, black pepper, salt, olive oil, lime juice, and cilantro. Add the chicken breasts, ensuring they are well coated in the marinade. Cover and refrigerate for at least 2 hours or overnight for optimal flavor.

Prepare the Creamy Green Sauce: In a blender, combine the cilantro, jalapeño, mayonnaise, Greek yogurt, lime juice, garlic powder, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning to taste, adding more lime juice or salt if needed. Transfer to a bowl and refrigerate until ready to serve.

Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade, letting any excess drip off. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

Rest & Serve: Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Serve the grilled chicken drizzled with the creamy green sauce, garnished with additional cilantro if desired.

Enjoy: Pair with rice, grilled vegetables, or a fresh salad for a complete meal.
