1 cup shelled pistachios, roughly chopped

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

2 tsp vanilla extract

½ cup plain Greek yogurt

½ cup buttermilk

½ cup dried cranberries (optional)

¾ cup white chocolate chips (optional)

Extra chopped pistachios for topping

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

    Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.

          Incorporate Yogurt and Buttermilk: Mix in the Greek yogurt and buttermilk until everything is well combined.

            Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid over-mixing.
