Ingredients
  

4 slices of sourdough bread

2 tablespoons olive oil (for brushing)

1 cup shredded mozzarella cheese

1/2 cup pepperoni slices (or any preferred toppings like mushrooms, bell peppers, etc.)

1/4 cup marinara sauce (plus extra for dipping)

1 teaspoon Italian seasoning (optional)

Salt and pepper, to taste

Fresh basil leaves (for garnish, optional)

Instructions
 

Prep the Bread: Begin by lightly brushing one side of each slice of sourdough bread with olive oil. This will give it a golden crust when grilled.

    Assemble the Sandwich: On the unbrushed side of two slices, spread a thin layer of marinara sauce. Sprinkle half of the mozzarella cheese evenly over the sauce. Layer the pepperoni slices (or other toppings of your choice) on top of the cheese, then add the remaining mozzarella cheese. Top with the other two slices of sourdough, brushed side out.

      Season: Sprinkle some Italian seasoning, salt, and pepper on the outside of the sandwiches if desired.

        Grill the Sandwich: Heat a skillet over medium heat. Once hot, carefully place the assembled sandwiches onto the skillet. Cook for about 4-5 minutes until the bottom is golden brown and crispy.

          Flip and Cook the Other Side: Carefully flip the sandwiches using a spatula. Cook for an additional 4-5 minutes, pressing down gently for even grilling, until the other side is also golden and the cheese is melted.

            Slice and Serve: Remove the sandwiches from the skillet and let them cool for a minute. Cut each sandwich in half for easier handling. Serve warm with extra marinara sauce on the side for dipping. Garnish with fresh basil if desired.
