8 oz. rice noodles (or noodles of choice)

2 cups chicken or vegetable broth

1 cup snap peas, trimmed

1 red bell pepper, thinly sliced

2 green onions, sliced

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vinegar (rice or apple cider)

Sesame seeds, for garnish

Fresh cilantro, for garnish

Cook Potstickers: In a large skillet or non-stick pan, cook the potstickers according to package instructions until golden brown and crispy. Set aside.

    Prepare Noodles: In a pot, bring water to a boil. Add rice noodles and cook according to package instructions (typically 4-6 minutes). Drain and rinse under cold water to prevent sticking.

      Make Broth: In the same skillet used for the potstickers, add a dash of sesame oil and sauté the minced garlic and grated ginger over medium heat for about 1-2 minutes until fragrant.
