4 boneless, skinless chicken breasts

1/4 cup olive oil

Juice of 2 lemons

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup quinoa, rinsed

2 cups water or low-sodium chicken broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1/4 red onion, finely chopped

1/4 cup fresh parsley, chopped

Feta cheese, crumbled (optional)

Instructions
 

Marinate the Chicken: In a bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Place the chicken breasts in a zip-top bag or shallow dish, pour the marinade over them, and seal or cover. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Cook the Quinoa: In a medium saucepan, combine the quinoa and water or chicken broth. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit, covered, for another 5 minutes. Fluff with a fork.

      Prepare the Salad: In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley. Season with salt and pepper to taste. If desired, sprinkle with crumbled feta cheese for extra flavor.

        Grill the Chicken: Preheat the grill to medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Grill the chicken for about 6-7 minutes per side, or until it reaches an internal temperature of 165°F (75°C) and has nice grill marks.
