Ingredients
  

1 sheet of puff pastry, thawed

6 large eggs

1 cup heavy cream

1 cup shredded cheese (cheddar, Gruyère, or your favorite blend)

1 cup spinach, fresh or sautéed

1 cup cherry tomatoes, halved

1/2 cup cooked bacon or ham, chopped (optional)

1 small onion, finely chopped

2 cloves garlic, minced

Salt and pepper to taste

1 tsp dried thyme or fresh herbs of choice

Olive oil for sautéing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Puff Pastry: Roll out the thawed puff pastry on a lightly floured surface to fit a 9-inch tart or pie pan. Gently press the pastry into the pan and trim any excess from the edges. Prick the bottom with a fork to prevent puffing.

      Blind Bake the Crust: Line the pastry with parchment paper and fill with pie weights or dried beans. Bake in the preheated oven for about 10-12 minutes, or until lightly golden but not fully baked. Remove from oven and set aside.

        Sauté Aromatics: In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes. If using, add chopped bacon or ham and cook until crispy. Add in the spinach and cook until wilted. Season with salt, pepper, and dried thyme.

          Make the Egg Mixture: In a mixing bowl, whisk together the eggs and heavy cream until well combined. Stir in the shredded cheese, sautéed vegetable mixture, and halved cherry tomatoes.

            Assemble the Quiche: Pour the egg and filling mixture into the pre-baked puff pastry crust, spreading it evenly.

              Bake the Quiche: Bake in the oven for 25-30 minutes or until the filling is set and the top is golden brown. The edges of the puff pastry should be beautifully puffed and crispy.

                Cool and Serve: Once baked, allow the quiche to cool for about 10 minutes before slicing. Serve warm or at room temperature.
