Ingredients
  

2 cups cooked pulled pork

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 small red onion, thinly sliced

1 jalapeño, diced (optional for heat)

1/2 cup fresh cilantro, chopped

1 avocado, sliced

1 cup corn (canned or frozen, thawed)

1 tablespoon olive oil

Salt and pepper to taste

Salsa and sour cream for serving

Instructions
 

Prepare the Filling: In a large skillet, heat olive oil over medium heat. Add the sliced red onion and diced jalapeño. Sauté until the onion is translucent and soft (about 5-7 minutes).

    Combine Pork and Veggies: Add the pulled pork and corn to the skillet. Stir well to combine and heat through. Season with salt and pepper to taste. Remove from heat.

      Assemble the Quesadillas: Place one flour tortilla on a flat surface. On one half of the tortilla, layer 1/4 of the cheese mixture (cheddar and Monterey Jack), followed by 1/4 of the pulled pork mixture, and top with some chopped cilantro. Fold the tortilla over to close it.

        Cook the Quesadilla: In the same skillet, add a little more olive oil if needed and heat over medium-high. Carefully place the folded quesadilla in the skillet. Cook for 3-4 minutes on each side until golden brown and crispy, and the cheese has melted. Repeat with remaining ingredients.

          Serve: Cut each quesadilla into wedges and serve with sliced avocado, salsa, and sour cream on the side. Enjoy your delicious pulled pork quesadillas!
