Ingredients
  

1/2 cup rolled oats

1/2 cup unsweetened almond milk (or any milk of your choice)

1/2 ripe banana, mashed

1/4 cup pumpkin puree

1 tablespoon maple syrup (or honey)

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon chia seeds

Pinch of salt

Toppings: sliced banana, chopped nuts, and a drizzle of maple syrup

Instructions
 

In a medium bowl, combine the rolled oats, almond milk, mashed banana, and pumpkin puree. Stir well until smooth.

    Add the maple syrup, cinnamon, nutmeg, chia seeds, and a pinch of salt into the oat mixture. Mix until all ingredients are fully incorporated.

      Transfer the mixture into a mason jar or airtight container and cover it tightly.

        Refrigerate the oats overnight for at least 4 hours, allowing the oats to soak and thicken.

          In the morning, give the oats a good stir and add a splash more almond milk if you prefer a thinner consistency.
