Ingredients
  

  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • ½ cup almond butter
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ¼ cup mini chocolate chips
  • ¼ cup chopped nuts or seeds
  • shredded coconut for rolling

Instructions

  • In a mixing bowl, combine pumpkin puree, almond butter, honey, and vanilla extract until smooth.
  • Add rolled oats, pumpkin pie spice, and ground cinnamon; stir until mixed.
  • Fold in chocolate chips and chopped nuts/seeds if using.
  • Cover and refrigerate for about 30 minutes to firm up.
  • Scoop out a tablespoon of mixture and roll into a ball.
  • Roll each ball in shredded coconut if desired.
  • Place on a baking sheet lined with parchment paper and refrigerate for another 30 minutes.
