½ teaspoon baking soda

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

1 cup granulated sugar

½ cup packed light brown sugar

½ cup vegetable oil

2 large eggs

1 cup pure pumpkin puree (not pumpkin pie filling)

1 teaspoon vanilla extract

½ cup chopped walnuts or pecans (optional)

½ cup raisins or chocolate chips (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and greasing a 9x5-inch loaf pan or lining it with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until well combined. Set aside.

      Combine Sugars and Oil: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well blended.

        Add Eggs and Pumpkin: Beat in the eggs one at a time, ensuring each is fully incorporated. Then, mix in the pumpkin puree and vanilla extract until smooth.

          Combine Wet and Dry Mixtures: Gradually fold the dry mixture into the wet ingredients using a spatula, mixing just until the flour is absorbed (avoid overmixing).
