4 slices of thick bread (Challah or Brioche work best)

1 cup canned pumpkin puree

2 large eggs

1/2 cup milk (or non-dairy milk)

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)

1 tablespoon brown sugar (optional, adjust sweetness to taste)

Pinch of salt

Butter or oil for cooking

Maple syrup, powdered sugar, or whipped cream for serving

Crushed pecans or walnuts for garnish (optional)

Instructions
 

In a mixing bowl, whisk together the canned pumpkin puree, eggs, milk, vanilla extract, pumpkin pie spice, brown sugar, and salt until smooth and well combined.

    Preheat a skillet or griddle over medium heat and add a little butter or oil to coat the surface.

      Dip each slice of bread into the pumpkin mixture, ensuring each piece is fully coated. Allow any excess mixture to drip off.

        Place the coated bread slices onto the skillet. Cook each side for about 3-4 minutes, or until golden brown and slightly crispy.

          Once cooked, remove from the skillet and keep warm. Repeat with the remaining slices of bread, adding more butter or oil as needed.

            Serve warm, topped with a drizzle of maple syrup, a dusting of powdered sugar, and a sprinkle of crushed nuts for added crunch if desired.
