4 slices of thick challah or brioche bread

1/2 cup canned pumpkin puree

2 large eggs

1/2 cup whole milk (or non-dairy alternative)

2 tablespoons brown sugar

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

Pinch of salt

Butter or coconut oil for frying

Maple syrup for serving

Optional toppings: whipped cream, pecans, or fresh cranberries

Instructions
 

In a medium bowl, whisk together the pumpkin puree, eggs, milk, brown sugar, vanilla extract, pumpkin pie spice, cinnamon, and salt until well combined.

    Preheat a non-stick skillet or griddle over medium heat, and add a bit of butter or coconut oil to coat the surface.
