1 loaf of brioche or challah bread, cubed

1 cup canned pumpkin puree

4 large eggs

2 cups milk (or almond milk for a dairy-free option)

1/2 cup brown sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup pecans or walnuts, chopped (optional)

Maple syrup, for serving

Whipped cream, for serving (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

    In a large mixing bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until well combined.

      Place the cubed brioche or challah bread into the greased baking dish. If using nuts, sprinkle the chopped pecans or walnuts over the bread cubes.

        Pour the pumpkin mixture evenly over the bread, ensuring that all the cubes are well soaked. Press down gently to submerge the bread.

          Cover the dish with plastic wrap and refrigerate for at least 1 hour, or ideally overnight, to allow the bread to absorb the mixture.

            Remove the casserole from the refrigerator and uncover. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the custard is set.

              Let the casserole cool for a few minutes before serving. Drizzle with maple syrup and top with whipped cream if desired.
