Ingredients

For the French Toast:

4 large eggs

1 cup milk (whole or almond)

1/2 cup canned pumpkin puree

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

8 slices of thick bread (brioche or challah work well)

Butter, for frying

For the Homemade Pumpkin Syrup:

1 cup maple syrup

1/4 cup canned pumpkin puree

1 teaspoon pumpkin pie spice

A pinch of salt

Instructions

Make the Pumpkin Syrup: In a small saucepan over medium heat, combine maple syrup, pumpkin puree, pumpkin pie spice, and a pinch of salt. Stir well and heat until it’s warm and well combined. Remove from heat and set aside.

Prepare the French Toast Mixture: In a large mixing bowl, whisk together the eggs, milk, canned pumpkin puree, vanilla extract, and pumpkin pie spice until smooth and well-blended.

Dip the Bread: Heat a large skillet or griddle over medium heat and add a pat of butter to coat the surface. Dip each slice of bread into the pumpkin mixture, ensuring both sides are soaked but not too soggy.

Cook the French Toast: Place the soaked bread slices on the hot skillet. Cook for about 3-4 minutes on each side or until they are golden brown and cooked through. Add more butter to the pan as necessary to avoid sticking.

Serve: Once cooked, remove the French toast from the skillet and plate them. Drizzle generously with the homemade pumpkin syrup.

Garnish (Optional): For an extra touch, you can top the French toast with whipped cream, a sprinkle of cinnamon, and a few pecans or walnuts.
