Ingredients
  

1 cup pumpkin puree (canned or fresh)

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

2 teaspoons pumpkin pie spice

1/2 teaspoon salt

1 cup chocolate chips (optional)

1/2 cup chopped walnuts or pecans (optional)

A sprinkle of sea salt (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      Add the pumpkin puree, egg, and vanilla extract to the butter-sugar mixture. Mix well until fully combined.

        In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, pumpkin pie spice, and salt.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

            If desired, fold in the chocolate chips and chopped nuts for added texture and flavor.

              Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie to allow for spreading.

                Sprinkle a tiny pinch of sea salt on top of each cookie before baking.

                  Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers look set.

                    Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
