6 large eggs

1/2 cup milk (or dairy-free alternative)

1 cup diced bell peppers (red and green)

1/2 cup diced onions

1 cup fresh spinach, chopped

1/2 cup crumbled feta cheese

1 tsp smoked paprika

Salt and pepper to taste

Olive oil spray or butter for greasing

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin with olive oil spray or butter.

    Whisk the Eggs: In a mixing bowl, crack the eggs and whisk them together with the milk, smoked paprika, salt, and pepper until well combined.

      Prepare Vegetables: In a separate bowl, combine the diced bell peppers, onions, and chopped spinach. Toss to mix the vegetables evenly.

        Combine Ingredients: Add the prepared vegetables to the egg mixture. Gently fold in the crumbled feta cheese until evenly distributed.
