Ingredients

16 oz (450g) large button mushrooms, cleaned and stems trimmed

3 tbsp ranch seasoning mix (store-bought or homemade)

3 tbsp olive oil

2 cloves garlic, minced

1 tbsp fresh parsley, chopped

1/2 cup grated Parmesan cheese (optional)

Salt and pepper, to taste

Lemon wedges, for serving

Instructions

Preheat your oven to 400°F (200°C).

In a large bowl, combine the olive oil and ranch seasoning mix. Whisk together until well combined.

Add the cleaned mushrooms to the bowl and toss them in the ranch-oil mixture until they are evenly coated.

Place the coated mushrooms on a baking sheet in a single layer, making sure there is space between each mushroom.

Sprinkle minced garlic over the top of the mushrooms, followed by salt and pepper to taste.

Bake in the preheated oven for about 15–20 minutes, or until the mushrooms are tender and golden brown.

If using, remove the mushrooms from the oven and sprinkle grated Parmesan cheese over the top. Return to the oven for an additional 3–5 minutes, or until the cheese is melted and bubbly.

Once done, remove the mushrooms from the oven, and allow them to cool slightly.

Garnish with fresh chopped parsley and serve warm with lemon wedges on the side for an extra zing.
