1 lb (450g) fresh mushrooms (such as cremini or button)

1 cup red wine (your preferred variety, like Merlot or Cabernet Sauvignon)

3 tablespoons unsalted butter

2 cloves garlic, finely minced

1 medium shallot, finely chopped

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley (for garnish)

Clean the Mushrooms: Gently wipe the mushrooms with a damp cloth to remove any dirt. Trim the stems if necessary and cut larger mushrooms in half or quarters.

    Sauté Aromatics: In a large skillet, melt the butter over medium heat. Add the chopped shallot and sauté for about 2 minutes, until it becomes translucent. Then, add the minced garlic and sauté for another 30 seconds, being careful not to burn it.

      Cook the Mushrooms: Add the mushrooms to the skillet and season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.

        Add Wine and Thyme: Pour in the red wine, scraping up any bits stuck to the bottom of the skillet. Add the fresh thyme and stir to combine. Increase the heat to medium-high and bring to a gentle simmer.

          Reduce the Sauce: Allow the wine to simmer, continuing to cook for about 10-15 minutes, or until the sauce has reduced to a thick consistency. Stir occasionally.

            Final Seasoning: Taste the sauce and adjust the seasoning with more salt, pepper, or a touch of thyme if desired.

              Serve: Remove from heat and transfer the mushrooms to a serving dish. Garnish with freshly chopped parsley.
