Ingredients
  

2 cups fresh rhubarb, chopped

1 cup sugar (or to taste)

4 cups water

1 cup freshly squeezed lemon juice (about 4-6 lemons)

Lemon slices and mint leaves for garnish

Instructions
 

In a medium saucepan, combine the chopped rhubarb and 2 cups of water. Bring to a boil over medium heat.

    Once boiling, reduce heat and simmer for about 10-15 minutes, until the rhubarb is soft and has released its juices.

      Remove from heat and strain the mixture through a fine mesh sieve into a bowl, discarding the solids. You should have about 2 cups of rhubarb juice.

        In the same saucepan, combine the rhubarb juice, sugar, and the remaining 2 cups of water. Stir until the sugar is fully dissolved.

          Add the freshly squeezed lemon juice and mix until well combined. Adjust the sweetness by adding more sugar if desired.

            Chill the lemonade in the refrigerator for at least 1 hour.

              Serve over ice, garnished with lemon slices and mint leaves for an extra refreshing touch. Enjoy!
