1 cup ricotta cheese

1 cup buttermilk

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon baking powder

1 tablespoon sugar

1/2 teaspoon salt

2 tablespoons unsalted butter, melted

Cooking oil or additional butter for the skillet

Optional toppings: fresh berries, honey, maple syrup, or powdered sugar

Instructions
 

In a large mixing bowl, combine ricotta cheese, buttermilk, eggs, and vanilla extract. Whisk until smooth and blended.

    In another bowl, whisk together flour, baking powder, sugar, and salt.

      Gradually add the dry mixture to the ricotta mixture, stirring gently until just combined. Avoid overmixing; small lumps are fine.

        Fold in the melted butter, ensuring it’s evenly distributed throughout the batter.

          Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking oil or butter.

            Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges appear set, about 3-4 minutes.

              Flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through.

                Remove from skillet and keep warm while repeating with the remaining batter.

                  Serve warm with your choice of toppings such as fresh berries, honey, maple syrup, or a dusting of powdered sugar.
