1 cup ricotta cheese

2 large eggs

1/4 cup milk (or buttermilk for extra tang)

1 teaspoon vanilla extract

1 tablespoon lemon zest (about 1 lemon)

1 tablespoon lemon juice

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/4 teaspoon salt

Butter or oil for cooking

In a large bowl, whisk together the ricotta cheese and eggs until smooth and well combined. Stir in the milk, vanilla extract, lemon zest, and lemon juice until fully incorporated.

    In a separate bowl, mix the flour, sugar, baking powder, and salt until evenly distributed.

      Gently fold the dry ingredients into the wet ingredients, being careful not to overmix. The batter should be slightly lumpy; avoid a smooth consistency to keep the pancakes fluffy.

        Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
