2 cups all-purpose flour

3 large eggs

1 tablespoon olive oil

1 teaspoon salt

1 bulb of garlic

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped

Salt and pepper to taste

1/4 teaspoon nutmeg

4 tablespoons unsalted butter

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the garlic bulb to expose the cloves, drizzle with a little olive oil, wrap it in foil, and roast for 30-35 minutes until soft and fragrant. Let it cool slightly, then squeeze the garlic cloves out into a bowl.

    Make the Dough: In a large mixing bowl or on a clean surface, mound the flour and make a well in the center. Crack in the eggs, add the olive oil, and salt. Using a fork, gradually incorporate the flour into the egg mixture until combined. Knead the dough for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

      Prepare the Filling: In a mixing bowl, combine the roasted garlic, ricotta cheese, Parmesan cheese, chopped basil, nutmeg, salt, and pepper. Mix well until you have a creamy filling.

        Roll Out the Pasta: Divide the pasta dough into four pieces. Roll out each piece as thin as possible using a pasta machine or rolling pin. Cut into squares or circles, about 2 inches in diameter.

          Fill the Ravioli: Place about a teaspoon of the filling in the center of each piece of dough. Moisten the edges with water, fold over, and press to seal tightly, ensuring no air pockets remain. Repeat for the remaining dough and filling.

            Cook the Ravioli: Bring a large pot of salted water to a boil. Carefully add the ravioli, cooking for about 3-5 minutes or until they float to the surface and are tender.

              Prepare the Sauce: In a large skillet, melt the butter over medium heat. Add the cooked ravioli carefully, sautéing gently for 2-3 minutes until lightly browned. Season with salt and pepper.

                Serve: Plate the ravioli, drizzling with extra butter from the skillet, and garnish with fresh parsley. Optional: Top with additional grated Parmesan cheese and fresh basil.
