Ingredients
  

4 slices of sourdough or crusty bread

4 oz cream cheese, softened

1/2 cup shredded sharp cheddar cheese

1/2 cup shredded mozzarella cheese

2-3 fresh jalapenos, roasted and chopped (adjust to taste)

2 tablespoons mayonnaise

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Optional: fresh cilantro or green onions for garnish

Roast the Jalapenos: Preheat your oven to 400°F (200°C). Place jalapenos on a baking sheet and roast for about 15 minutes, turning occasionally, until the skin is charred and blistered. Remove from oven, let cool slightly, and then peel off the skin, cut them open, and remove the seeds if desired. Chop them finely.

    Prepare the Cheese Mixture: In a mixing bowl, combine the softened cream cheese, shredded cheddar, shredded mozzarella, chopped roasted jalapenos, mayonnaise, garlic powder, salt, and pepper. Mix until well combined and creamy.

      Assemble the Sandwich: Take two slices of your chosen bread and spread a generous amount of the cheese mixture on one side of each slice. Place another slice of bread on top to form a sandwich. Repeat with the remaining slices and cheese mixture.

        Grill the Sandwiches: Heat a large skillet over medium heat and drizzle olive oil in the pan. Once hot, carefully place one sandwich in the skillet. Cook for 3-4 minutes or until golden brown. Carefully flip and cook the other side until golden brown and the cheese is melted, about another 3-4 minutes.

          Serve: Remove the sandwich from the skillet and let it cool for a minute before slicing it in half. If desired, garnish with fresh cilantro or green onions. Serve hot and enjoy the explosive flavors!
