4 chicken thighs (bone-in, skin-on)

2 ripe peaches, pitted and cut into wedges

1 medium red onion, sliced

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary (or ½ teaspoon dried rosemary)

Salt and pepper, to taste

¼ cup chicken broth

2 tablespoons balsamic vinegar

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the chicken thighs, olive oil, garlic, thyme, rosemary, salt, and pepper. Toss until the chicken is evenly coated.

      In a separate bowl, mix the peach wedges, red onion slices, chicken broth, and balsamic vinegar. Stir gently to combine.

        In a large oven-proof skillet or baking dish, nestle the seasoned chicken thighs skin-side up. Arrange the peach and onion mixture around the chicken.

          Roast in the preheated oven for about 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown and crispy.

            If desired, broil the dish for an additional 2-3 minutes for extra crispiness on the chicken skin.

              Once done, remove from the oven and let it rest for 5 minutes. Garnish with fresh basil leaves before serving.
