3-4 lbs pork loin

2 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon salt

1 teaspoon black pepper

1 cup chicken broth

1 cup dry white wine

1/4 cup all-purpose flour

2 tablespoons butter

1 tablespoon soy sauce

1 tablespoon Dijon mustard

Fresh parsley for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Marinade: In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and black pepper. Rub this mixture all over the pork loin, ensuring it’s evenly coated.

      Sear the Pork: Heat a large oven-safe skillet over medium-high heat. Once hot, add the pork loin and sear each side for about 4-5 minutes until a golden crust forms.

        Roast in Oven: Transfer the skillet to the preheated oven and roast the pork loin for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

          Rest the Meat: Once done, remove the pork loin from the oven, cover it loosely with aluminum foil, and let it rest for about 10 minutes.

            Make the Gravy: While the meat rests, place the skillet back on the stove over medium heat. Whisk together the flour with the chicken broth, white wine, soy sauce, and Dijon mustard. Bring to a simmer, scraping the bottom of the skillet to release any flavorful bits, and cook until thickened (about 5-7 minutes).

              Finish the Gravy: Stir in the butter until melted and incorporated. Adjust seasoning with salt and pepper to taste.

                Slice and Serve: Slice the pork loin into medallions. Serve with the rich gravy poured generously over the top and garnish with fresh parsley.
