  • 1 pound ground beef or turkey
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz sweet corn, drained
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 cup frozen mixed bell peppers
  • 1 cup beef or vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 1 cup frozen tater tots
  • Fresh cilantro leaves for garnish (optional)
  • Sour cream for serving (optional)

Instructions

  • Brown the ground beef or turkey in a skillet over medium heat until fully cooked.
  • Drain excess fat and add diced onion and minced garlic, sautéing until translucent.
  • Transfer the mixture to a slow cooker and add black beans, corn, tomatoes, and bell peppers.
  • Pour in the broth and sprinkle with chili powder, cumin, smoked paprika, salt, and pepper.
  • Stir well to combine all ingredients and cover the slow cooker.
  • Cook on low for 6-8 hours or high for 3-4 hours.
  • Add frozen tater tots on top 30 minutes before serving, covering again.
  • Once cooked, sprinkle cheese on top and let it melt for 5-10 minutes.
  • Serve hot, garnished with cilantro and sour cream if desired.
