1 can of sardines in olive oil (preferably boneless)

2 slices of whole grain bread

1 tablespoon of Dijon mustard

1 tablespoon of lemon juice (freshly squeezed)

1 small red onion, finely chopped

1 garlic clove, minced

1 teaspoon of capers, rinsed and drained

Fresh parsley, chopped (for garnish)

Salt and pepper to taste
