Ingredients

1 lb (450g) beef flank steak, thinly sliced against the grain

1 cup fresh broccoli florets

1 red bell pepper, sliced into thin strips

1 cup snap peas, trimmed

1 cup cooked jasmine rice

2 tablespoons vegetable oil

3 garlic cloves, finely minced

1 inch piece of fresh ginger, grated

1/2 cup low-sodium soy sauce

1/4 cup packed brown sugar

2 tablespoons rice vinegar

1 tablespoon cornstarch

2 tablespoons water

Sesame seeds, for garnish

Green onions, thinly sliced for garnish

Instructions

Marinate the Beef:

In a mixing bowl, whisk together the low-sodium soy sauce, brown sugar, rice vinegar, minced garlic, and grated ginger to create a flavorful marinade. Add the thinly sliced flank steak to the bowl, ensuring each piece is well coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for a deeper flavor.

      Prepare the Sauce:

In a small saucepan, combine the reserved marinade (set aside before adding the beef) with cornstarch and water. Heat the mixture over medium heat, stirring continuously until it begins to thicken into a glossy sauce. Once it reaches your desired consistency, remove from heat and set aside.

          Cook the Vegetables:

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets, sliced bell pepper, and snap peas to the pan. Stir-fry for approximately 4-5 minutes, or until the vegetables are bright and tender-crisp. Once cooked, transfer the vegetables to a plate and set aside.

              Cook the Beef:

In the same pan, add the remaining tablespoon of vegetable oil and increase the heat to high. Add the marinated beef in a single layer; you may need to cook it in batches to avoid overcrowding the pan. Sauté for 2-3 minutes on each side, or until the beef is browned and cooked through.

                  Combine and Serve:

Lower the heat slightly and return the cooked vegetables to the pan with the beef. Pour the thickened sauce over the mixture, tossing everything together to ensure it is evenly coated. Heat for an additional minute, allowing the flavors to meld.

                      Assemble the Bowl:

Spoon the fluffy cooked jasmine rice into individual serving bowls. Then, generously top each bowl with the beef and vegetable mixture. If desired, drizzle any reserved marinade over the top for an extra burst of flavor.

                          Garnish:

Finally, sprinkle sesame seeds and freshly chopped green onions over each bowl for a delightful finish and added texture.
