Ingredients
  

  • 2 slices hearty whole grain bread
  • 2 strips crispy bacon
  • 1 large egg
  • 1 leaf fresh romaine lettuce
  • 1 thick slice ripe tomato
  • 1 tablespoon creamy mayonnaise
  • to taste salt
  • to taste freshly ground black pepper
  • optional slices of ripe avocado

Instructions

  • Cook the bacon in a skillet over medium heat until crispy and golden brown.
  • Transfer the bacon to a plate lined with paper towels to absorb excess grease.
  • In the same skillet, crack the egg and cook it sunny-side up or to your preferred doneness.
  • Sprinkle the egg with salt and freshly ground black pepper.
  • Toast the slices of whole grain bread until golden and crispy.
  • Spread mayonnaise on one side of each slice of bread.
  • Layer the sandwich starting with romaine lettuce, followed by tomato, bacon, and egg.
  • Add avocado slices on top of the egg if using.
  • Place the second slice of bread on top, mayonnaise side down.
  • Press gently and slice the sandwich in half diagonally before serving.

Notes

For added creaminess, consider adding avocado slices.
