  • 2 lbs beef chuck cut into 1-inch cubes
  • 4 large onions thinly sliced
  • 4 cloves garlic minced
  • 4 cups beef broth
  • 1 cup grape juice
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh thyme leaves
  • 2 bay leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons all-purpose flour
  • 1 baguette or a crusty loaf of bread
  • 2 cups shredded Gruyère cheese
  • 2 tablespoons unsalted butter softened
  • 1 teaspoon garlic powder
  • Fresh parsley chopped

Instructions

  • In a large pot, heat olive oil over medium-high heat and brown the seasoned beef cubes for 5-7 minutes.
  • Remove the beef and caramelize the sliced onions in the same pot for 15-20 minutes.
  • Add minced garlic and sauté for 1 minute, then deglaze with grape juice.
  • Return the beef to the pot and add beef broth, tomato paste, thyme, bay leaves, Worcestershire sauce, and balsamic vinegar.
  • Bring to a boil, then simmer for 1.5 to 2 hours until beef is tender.
  • For a thicker stew, mix flour with water and add during the last 30 minutes.
  • Preheat oven to 375°F (190°C) and slice the baguette in half.
  • Mix softened butter and garlic powder, then spread on the bread and top with cheese.
  • Bake for 10-15 minutes until cheese is melted and bubbling.
  • Serve the stew in bowls with cheesy bread on the side, garnished with parsley.
