  • 1 pound fresh green beans trimmed and cut into 2-inch pieces
  • 1 cup sliced mushrooms fresh or canned
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 cup sour cream
  • 1 cup cream of mushroom soup homemade or canned
  • 1 teaspoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • 1 cup crispy fried onions plus extra for topping
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large pot, bring salted water to a boil and blanch the green beans for about 5 minutes.
  • Drain the beans and transfer them to a bowl of ice water to halt cooking, then drain again.
  • In a skillet, heat olive oil over medium heat, add onion and sauté until translucent.
  • Incorporate minced garlic and sliced mushrooms, cooking until mushrooms are tender.
  • In a mixing bowl, combine sour cream, cream of mushroom soup, soy sauce, Worcestershire sauce, and half of the cheddar cheese.
  • Fold in the sautéed onion and mushroom mixture, followed by the blanched green beans.
  • Transfer the mixture to a greased 9x13 inch baking dish, top with remaining cheddar cheese and crispy fried onions.
  • Bake for 25-30 minutes until bubbling and golden brown.
