  • 2 lbs ground beef
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 each red bell pepper diced
  • 1 each green bell pepper diced
  • 2 cans 15 oz each kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 28 oz crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • to taste salt and freshly ground black pepper
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • optional garnishes: shredded cheese sour cream, chopped green onions, sliced jalapeños

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion and garlic for about 5 minutes until translucent.
  • Add ground beef, breaking it up, and cook until browned, about 6-8 minutes.
  • Stir in red and green bell peppers, cooking for an additional 3-4 minutes.
  • Mix in tomato paste, chili powder, cumin, paprika, oregano, and cayenne pepper, cooking for 2 minutes.
  • Pour in crushed tomatoes and beef broth, then add kidney and black beans.
  • Bring to a simmer, reduce heat to low, cover, and cook for at least 30 minutes.
  • Taste and adjust seasoning with salt and pepper as needed.
  • Serve hot, garnished with desired toppings.
