Ingredients
  

2 cups cooked jasmine rice (preferably day-old)

1 lb boneless chicken thighs, diced

1/4 cup soy sauce

2 tbsp teriyaki sauce

1 tbsp sesame oil

1 tbsp vegetable oil

3 green onions, finely chopped

2 cloves garlic, minced

1 cup mixed vegetables (carrots, peas, corn)

2 large eggs, lightly beaten

Salt and pepper to taste

Toasted sesame seeds for garnish

Nori strips for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine diced chicken with soy sauce and teriyaki sauce. Allow it to marinate for at least 20 minutes, giving it a rich flavor.

    Prepare the Pan: Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

      Sauté Aromatics: In the same pan, add sesame oil. Sauté minced garlic and the white parts of the green onions for about 30 seconds until fragrant.

        Cook the Veggies: Add mixed vegetables to the pan and stir-fry for 3-4 minutes until they are tender.

          Add Rice and Chicken: Stir in the cooked jasmine rice and cooked chicken. Toss everything together, ensuring the rice is heated through and the ingredients are well combined.

            Scramble the Eggs: Push the rice mixture to one side of the pan. Pour the beaten eggs into the other side and scramble until cooked, then mix into the rice.

              Season the Dish: Add salt, pepper, and additional soy sauce, if needed, according to your taste. Stir well.
