Savory Slow-Cooked Breakfast Tacos

Ingredients
  

1 pound crumbled breakfast sausage

6 large eggs

1 cup shredded sharp cheddar cheese

1 medium bell pepper, diced (any color of your choice)

1 small onion, finely chopped

1 can (4 oz) diced green chilies

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

8 small flour tortillas

Optional toppings: diced avocado, sour cream, fresh cilantro, salsa

Instructions
 

Heat a skillet over medium heat. Add the crumbled breakfast sausage, cooking it until it is browned and no longer pink, approximately 5-7 minutes. Once cooked, drain any excess grease and transfer the sausage to a slow cooker (Crockpot).

    In a mixing bowl, whisk the eggs together thoroughly with garlic powder, smoked paprika, salt, and pepper. Once combined, pour the egg mixture over the sausage in the slow cooker.

      Add the diced bell pepper, chopped onion, and the canned green chilies to the slow cooker. Stir the mixture gently to ensure all the ingredients are well distributed.

        Cover the slow cooker with its lid and cook on low for 4 hours or on high for 2 hours, until the egg mixture is set and the flavors have blended beautifully.

          About 10 minutes before serving, sprinkle the shredded cheddar cheese over the egg mixture in the slow cooker. Replace the lid to allow the cheese to melt into the mixture.

            While the cheese is melting, gently warm the tortillas in a skillet or microwave until they are soft and flexible.
