2 cups water or vegetable broth

1/2 cup kimchi, chopped (plus a bit more for garnish)

1 ripe avocado, sliced

2 large eggs

1 tablespoon sesame oil

1 tablespoon soy sauce or tamari

1 teaspoon gochujang (Korean chili paste) - optional

1 green onion, sliced (for garnish)

Salt and pepper to taste

Cook the Oats: In a medium saucepan, bring the water or vegetable broth to a boil. Add the rolled oats and a pinch of salt, then reduce the heat to medium-low. Cook, stirring occasionally, for about 5-7 minutes or until the oats are soft and cooked through.
