4 large eggs

1 cup fresh spinach, chopped

1 ripe avocado, diced

1 tablespoon olive oil or butter

1 tablespoon milk (optional, for creamier texture)

Salt and pepper, to taste

A pinch of red pepper flakes (optional)

Fresh herbs (such as chives or parsley) for garnish

Instructions
 

In a bowl, crack the eggs and whisk them together. If you prefer creamier eggs, add the milk and mix well. Season with salt and pepper to taste.

    Heat the olive oil or butter in a non-stick skillet over medium heat.

      Once hot, add the chopped spinach to the skillet and sauté for about 1-2 minutes until wilted.

        Pour the beaten eggs over the spinach. Reduce the heat to low and gently stir the eggs with a spatula, scrambling them softly.

          Cook until the eggs are just set but still creamy, about 3-4 minutes, being careful not to overcook.

            Remove the skillet from heat and gently fold in the diced avocado. If you like a bit of spice, sprinkle in the red pepper flakes.

              Serve immediately, garnishing with fresh herbs for a pop of color.
