Ingredients
  

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs, beaten

1 cup panko breadcrumbs

1/4 cup sesame seeds

1/4 cup vegetable oil (for frying)

For the sauce:

1/2 cup honey

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon grated ginger

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

For garnish:

Sliced green onions

Toasted sesame seeds

Instructions
 

In a mixing bowl, combine cornstarch, salt, and black pepper. Add chicken pieces and toss until well coated.

    Dip each piece of coated chicken into the beaten eggs, allowing excess to drip off. Then dredge in a mixture of panko breadcrumbs and sesame seeds until evenly coated.

      Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Drain on a paper towel-lined plate.

        In a separate saucepan, combine honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Bring to a simmer over medium heat.

          Once the mixture is simmering, add the cornstarch and water mixture to the sauce to thicken it, stirring constantly until it reaches your desired consistency.

            Remove from heat and toss the fried chicken pieces in the sauce until they are coated evenly.

              Serve hot, garnished with sliced green onions and extra toasted sesame seeds on top.
