1 cup vermicelli (thin or medium)

3 tablespoons ghee (clarified butter)

4 cups milk

3/4 cup sugar (adjust to taste)

1/4 teaspoon cardamom powder

1/4 cup chopped nuts (cashews, almonds, or pistachios)

1/4 cup raisins

A pinch of saffron strands (optional)

2 tablespoons rose water (optional)

Instructions
 

Roasting the Vermicelli: In a large pan, heat the ghee over medium heat. Once hot, add the vermicelli and roast it until golden brown, stirring frequently to ensure even cooking. This should take about 5-7 minutes.

    Cooking the Milk: In a separate pot, bring the milk to a gentle boil. Stir occasionally to prevent it from sticking to the bottom.

      Combining Ingredients: Once the vermicelli is roasted, carefully pour the boiling milk over it. Add the sugar, cardamom powder, saffron strands (if using), and stir well.

        Simmering: Let the mixture simmer on low heat for about 10-15 minutes, or until the vermicelli is cooked through and has absorbed most of the milk. Stir occasionally.

          Adding Nuts and Raisins: Stir in the chopped nuts and raisins. Cook for another 5 minutes, allowing the flavors to meld together.

            Finishing Touches: If you like a floral hint, add rose water before removing from heat. Give it a final gentle stir.

              Serving: Transfer the Seviyan to a serving bowl, and let it cool slightly before serving. You can serve it warm or chilled, depending on your preference!
