Ingredients
  

2 tablespoons olive oil

1 large onion, finely chopped

1 red bell pepper, chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 can (28 ounces) crushed tomatoes

Salt and pepper to taste

4 large eggs

Fresh parsley or cilantro, chopped for garnish

Crumbled feta cheese (optional)

Fresh crusty bread for serving

Instructions
 

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, and sauté for about 5-7 minutes, or until softened.

    Stir in the minced garlic, cumin, paprika, and cayenne pepper. Cook for another minute until fragrant.

      Pour in the crushed tomatoes, season with salt and pepper, and stir to combine. Let the mixture simmer for about 10-15 minutes, or until it thickens slightly.

        Make small wells in the sauce using a spoon, and carefully crack an egg into each well. Cover the skillet with a lid and cook for another 5-8 minutes, or until the egg whites are set, but the yolks are still runny. (Cook longer if you prefer firmer yolks.)

          Remove from heat and sprinkle chopped parsley or cilantro over the top. Add crumbled feta cheese if desired.

            Serve warm with fresh crusty bread to soak up the delicious sauce.
