1 pound smoked sausage (kielbasa or chicken sausage), sliced into rounds

2 cups bell peppers (red, yellow, and green), cut into strips

1 medium red onion, sliced into wedges

2 cups broccoli florets

2 medium zucchinis, sliced into half-moons

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature will help caramelize the veggies and the sausage.

    Prepare the Sheet Pan: Line a large baking sheet with parchment paper or a silicone baking mat for easy cleanup.

      Mix the Ingredients: In a large bowl, combine the sliced sausage, bell peppers, red onion, broccoli, zucchinis, and minced garlic. Drizzle the olive oil over the mixture and sprinkle with dried thyme, oregano, paprika, salt, and pepper. Toss everything together until the ingredients are evenly coated.

        Spread on the Pan: Transfer the mixed ingredients to the lined sheet pan, spreading them out in a single layer. Make sure not to overcrowd the pan to ensure even roasting.
