1 pound large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cooked quinoa (or rice)

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 bell pepper, diced (red, yellow, or orange)

1 cup corn (fresh or frozen)

1 lime, juiced

Salt and pepper, to taste

2 tablespoons olive oil

1 teaspoon chili powder

½ teaspoon cumin

Fresh cilantro, for garnishing

For Mango Salsa:

1 ripe mango, diced

1 jalapeño, seeded and minced

¼ cup red onion, finely chopped

1 lime, juiced

Salt, to taste

For Lime-Chili Sauce:

¼ cup Greek yogurt (or sour cream)

2 tablespoons lime juice

1 teaspoon chili powder

1 teaspoon honey (optional)

Salt, to taste

Instructions
 

Prepare the Mango Salsa: In a medium bowl, combine the diced mango, minced jalapeño, chopped red onion, lime juice, and salt. Mix well and set aside to allow the flavors to meld.

    Make the Lime-Chili Sauce: In a small bowl, whisk together Greek yogurt, lime juice, chili powder, honey (if using), and salt until smooth. Adjust seasoning to taste and refrigerate until ready to use.

      Cook the Shrimp: In a large skillet, heat olive oil over medium heat. Add the shrimp and sprinkle with chili powder, cumin, salt, and pepper. Sauté for 2-3 minutes, or until the shrimp turn pink and opaque. Remove from heat.
