Ingredients
  

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Avocado Bowls:

2 ripe avocados, diced

2 cups cooked quinoa (or rice)

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, halved

¼ cup fresh cilantro, chopped

For the Mango Salsa:

1 ripe mango, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

½ cup Greek yogurt or sour cream

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon honey

Salt to taste

Instructions
 

Prepare the Shrimp:

    - In a large bowl, mix the olive oil, minced garlic, smoked paprika, cumin, lime juice, salt, and pepper. Add the shrimp and toss to coat.

      - Heat a skillet over medium-high heat. Add the shrimp to the skillet and cook for 2-3 minutes on each side, until they are pink and cooked through. Remove from the heat.

        Make the Mango Salsa:

          - In a separate bowl, combine the diced mango, red onion, jalapeño, lime juice, and salt. Toss well to combine and set aside.

            Prepare the Lime-Chili Sauce:

              - In a small bowl, mix together the Greek yogurt (or sour cream), lime juice, chili powder, honey, and salt. Adjust the seasoning to taste and set aside.

                Assemble the Bowls:

                  - In each serving bowl, layer the cooked quinoa (or rice), black beans, diced avocado, and cherry tomatoes.
