Ingredients

1 lb (450g) large shrimp, peeled and deveined

3 cups fresh or frozen sweet corn

1 cup heavy cream

1 cup vegetable or chicken broth

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté Aromatics: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

Prepare the Corn Base: Stir in the corn and cook for about 5 minutes, allowing the flavors to meld together. Season with salt, pepper, and smoked paprika.

Add Liquid: Pour in the vegetable or chicken broth and bring the mixture to a gentle simmer. Cook for 5-7 minutes, allowing the broth to reduce slightly.

Incorporate Cream: Reduce the heat to low and stir in the heavy cream. Let it simmer for another 5-7 minutes until the creamed corn thickens. Stir occasionally to prevent sticking.

Cook the Shrimp: In a separate pan, lightly season the shrimp with salt and pepper. Add them to the skillet with the creamed corn, cooking for 3-4 minutes or until the shrimp turn pink and opaque, stirring gently to coat them in the creamy sauce.

Final Touch: Taste and adjust seasoning, adding more salt, pepper, or smoked paprika as needed.

Serve: Garnish with freshly chopped parsley before serving. This dish pairs beautifully with crusty bread, rice, or your favorite side.
