1 cup shrimp, peeled and deveined

1 cup mixed vegetables (carrot, bell pepper, cabbage, and green onions), finely chopped

2 cloves garlic, minced

1 teaspoon ginger, grated

2 teaspoons soy sauce

1 teaspoon sesame oil

1 packet of dumpling wrappers (about 30 wrappers)

Salt and pepper to taste

Water (for sealing the dumplings)

Oil (for pan-frying)

Prepare the Filling: In a food processor, combine the shrimp, mixed vegetables, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Pulse until the mixture is coarse but well combined. Do not over-process; you want some texture.

    Wrap the Dumplings: Take a dumpling wrapper and place a small spoonful of the filling (about a teaspoon) in the center. Dip your finger in water and moisten the edges of the wrapper. Fold the wrapper in half to create a half-moon shape, pressing the edges to seal. You can make pleats along the edges for a decorative touch. Repeat until all fillings are used.

      Cook the Dumplings: In a large skillet, heat 1-2 tablespoons of oil over medium heat. Place the dumplings in the skillet in a single layer, ensuring they are not touching. Cook for about 2-3 minutes or until the bottoms are golden brown.

        Steam the Dumplings: Carefully add 1/4 cup of water to the skillet (it may splatter). Immediately cover the skillet with a lid and reduce the heat to medium-low. Steam the dumplings for about 5 minutes or until they are cooked through and the water has evaporated.

          Serve: Remove the lid and let the dumplings crisp up for an additional minute. Serve hot with a dipping sauce made of soy sauce, rice vinegar, and a splash of chili oil, if desired.
